Ingredients
1 pound smoked kielbasa
1 pound dry split peas
6 cups water
1 cup chopped carrots (2 medium carrots)
1/2 onion, chopped
1 cup chopped celery (2 stalks)
1 tbsp minced fresh parsley
1 tsp salt
½ tsp coarse black pepper
2 bay leaves (I just have chopped bay leaves, so I use about 1-2 tsp.)
Cut sausage in half lengthwise; cut into ¼ in. pieces. Place in pot; add remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 1 ¼ to 1 ½ hours or until peas are tender. Remove bay leaves.
Another easy recipe, and it's pretty good for ya. I'm including this in my beans category because I keep my dried split peas with all my dried beans. I don't know if it's actually a bean. Maybe it is.
